Well we have two words for you: Ramp Butter.
Chef Scott Smallman has a bit more time on his hands these days since the restaurant industry slowed down. Enough time, at least, to forage for wild ramps on his friend’s private property. The patches are so large, we’re even taking some to transplant elsewhere. While you all have been gobbling up the fresh ramps this spring, we may have kept a few hidden from view in order to whip up this little delicacy.
Fresh, wild-foraged ramps are cleaned, blanched, shocked, chopped, and whipped into certified organic butter. Chef Scott added a dash of salt, a sprinkle of black pepper, and a pinch of lime zest to turn this into an amazing start to your sautees, a fantastic finish to your steak, or anything in between. Once these are gone, we won’t have more until next year!
