Ceylon, or “true cinnamon,” is native to Sri Lanka and southern parts of India. Ceylon (versus the more common Cassia) has a mildly sweet flavor and is prized as a cooking spice throughout the world. It’s also the variety we use in any of our baked goods that call for cinnamon.
